Viticulture: Certified organic (AB, 2007), 5,500 vines ha, maximum yield of 45 hl ha. Vinification: Sorted in the vineyard, pressed with whole clusters, ambient yeast fermentation, blocked malolactic conversion, aged for 11 12 months in used barrels, filtered.
