2022 Jean-Philippe Fichet, Bourgogne Hautes Cotes de Beaune Blanc, Burgundy, France Vermont fermentation with natural yeastsIn his constant search for freshness and minerality, Jean Philippe Fichet found some new parcels in the high elevation sites of the Haute Cotes de Beaune. This taught, direct cuvee is vinified in stainless steel tank before 11 months of elevage in a combination of Demi Muids (large oak barrels) and stainless steel tanks.
