Aged 3–5 years in ex-bourbon barrels and ex-sherry casks

2023 Theo Dancer Bourgogne Aligote 1.5L Magnum, Burgundy, France Margins 2021 Ridge Vineyards Monte BelloDance's plot of Aligote it situated in Nantoux. Hand harvest, the wine is pressed and put directly into barrel. Once fermentation is complete it is unracked untilwinter. Then racked into stainless to settle before bottling.
