In 2003, they decided to create The Don Chisciotte vineyard with 3 different parcels of Fiano. The wine is aged and fermented in stainless steel tanks, macerating on the skins and resting on the lees. Lovely lifted aromatics and a touch of tannic grip from skin maceration, this wine is absolutely delicious.
