2023 Domaine Alice et Olivier de Moor Vau de Vey, Chablis Premier Cru, France Indiana 12% Sauvignon BlancThe De Moor purchased 0. 92 hectares of this Premier Cru vineyard in 2017. The name is local dialect for "little valley". The soils feature a heavy marl that remind Olivier of the Rosette vineyard. The hill here is much steeper though. Long alcoholic and malolactic fermentation in 228l barrels. Aged a year or more on the lees without racking or cold stabilization. The wine is normally bottled without filtration but may go through a light, non sterile
